If it was me, I'd play it safe and use a factory stall (or new factory replacement up to 2000 RPM) for the application. If it sounds questionable at the light, the tech's will check it, and if it stalls too high, your out. I'm assuming they would check it in High Range, since they stall lower in low range. Factory equivalent is what we're looking for.
As far as finding out what it would stall, your best bet is to ask someone who's done it. Every torque converter acts differently depending on the torque of your engine and your gear ratios etc.
Had a Ford guy tell me that a Pinto Stall was pretty cool for a couple rounds, then they blow up. Plus it wasn't stalling anywhere close to 2000 RPM.
Also had a guy from Hughes Engines tell me that if I needed a stall then that meant I sucked at tuning carburetors. :-)
